La Spinosa® CHIANTI D.O.C.G. RISERVA 2021 BIO is made from selected Sangiovese grapes that undergo a light draining followed by maceration with the indigenous starter culture for about 10 days at a controlled temperature in 30hl wooden vats.
This is followed by ageing for 12-18 months in casks and large barrels.
Tasting Notes
Garnet red colour with vermillion hints, vinous and spicy with notes of ripe berries. Tannic and dry in the mouth.
Food Pairing
Perfect with typical Tuscan dishes such as bistecca alla fiorentina and stews. Excellent with mature cheeses. Serve at 18-20°C.
